Sometimes you just need a good fajita on a Friday evening. However, there is a reason why the wraps remain practically unchanged if you leave them in your cupboard for a year… They are often one of the most refined and processed things we can eat designed to live for years on a shelf. Other ‘food’ products which do this include the McDonald’s burger. Food is supposed to be an organic substance and like all other organic substances, it is meant to naturally decompose. Therefore, if these types of products don’t decompose, you may wish to question why and what makes them so unnatural?
Here is an easy, 3(ish) ingredient recipe for a filling, healthy and delicious wrap you can make at home.
Ingredients for 2 people + leftovers:
- 400g grated carrot
- 4 eggs
- 4-5 heaped tablespoons of flaxseed
- 1 tablespoon of buckwheat flour (or as needed to fully bind)
- Fry the carrot in some butter/coconut oil with spices of your choice (e.g. paprika, turmeric, salt, cumin).
- Preheat oven to 180-200°C.
- Mix carrot, eggs and flax in a bowl to get a liquidy doe consistency similar to a very thick pancake mixture (use more flax if you think it needs to be thicker, or a bit of buckwheat flour if needed to bind more).
- Use a serving spoon to put one portion of the mixture on baking paper on a tray and spread around into the shape of the wrap you want and add more mixture if you need it bigger.. If you have space put more portions on the tray at once to cook at the same time, or conversely make one huge one and cut it into separate wraps after.
- Bake for 10-15 minutes until the wrap is firm to touch.
- Take out the oven, be careful to peel off the baking paper and enjoy as a wrap with whatever filling you like e.g. chicken, avocado, hummus, spinach, pesto, cucumber, tomatoes, mushrooms… (wraps are more likely to stick to the baking paper when not cooked enough, or need to cool down slightly first).
This is what we found works for us and we enjoy – we have even found these work well as a healthy pizza base alternative! However if it’s not for you search around for a recipe online and you’ll find plenty. Put the effort in to make it from scratch – it takes more time, however, small things like this will give you more time in years lived and in better health if you do. And it tastes way better!
